Baked Rice Puddingbaked rice pudding



  • Preheat oven to 350 degrees F.
  • On stove top, heat 1/2 cup water to boiling.
  • Remove from heat and stir in 1/2 cup uncooked instant rice. Cover and let stand 5 minutes.
  • In a bowl, blend together eggs, sugar vanilla and salt. Gradually stir in scalded milk.
  • Mix in rice and raisins.
  • Pour into a 1 1/2 qt casserole dish; sprinkle with cinnamon.
  • Place casserole dish in a second pan; pour very hot water into pan until 1 1/4 inches deep.
  • Bake approximately 70 minutes or until knife inserted halfway between center and edge comes out clean.
  • Remove casserole dish from water.
  • Serve warm or cold.
