Garlic has been used since the beginning of recorded history. It was found in ancient Greek temples and Egyptian pyramids. Doctors of ancient Greek, Roman, Egyptian, Indian, and Chinese cultures prescribed garlic for medical applications. Garlic was also administered to provide strength and increase work capacity for laborers, and as a "performance enhancer" for Olympic athletes. Modern science is tending to confirm many of the beliefs of ancient cultures regarding garlic. Studies have found garlic has disease prevention and treatment potential.

Dried garlic has a nutty, crunchy quality and can be used to flavor all varieties of food. Dried and ground garlic, or garlic powder is extremely strong and should be used sparingly as it can easily overwhelm a dish and remain on the palette a very long time.
Depending on how it is cooked, garlic loses varying degrees of flavor intensity. Generally, the longer it is cooked, the more gentle the flavor.
