Made from fresh harvested coconut which has been shredded or flaked and then gently air dried to remove as much moisture as possible.
Desiccated coconut is an unsweetened, somewhat powdery product which is produced by drying shredded coconut and then grinding the shreds. It has a rich texture (holds up well in cooking) very low moisture content and a higher content of nutrients (good carbs, good fats and great proteins) than coconut flour. It makes for a richer cooking or baking experience.
This is NOT to be confused with NORMAL coconut flour, which is an unsweetened powder that is produced by drying and powering coconut meat that has the oil pressed out of it. Therefore it is less fatty. It's also a gluten free flour, and a grain free flour too. So for those who follow strict grain free diets, coconut flour opens up a world of delicious baked goods. Use 1:1 with regular flour.
It’s a high fiber, fairly high protein flour too. When you make these into muffins, breads, and cakes, they are quite filling (because of the fiber content). The flour is also “sweet” by itself because of the natural sugars in the coconut, meaning that you don’t have to sweeten it as much.

You can buy coconut oil, syrup, sugar, dessicated coconut and coconut flour in any quantity you can find, because you can simply use what you need, then package and freeze the rest. They can be used straight out of the freezer. Coconut oil (or butter at low temperatures) will keep indefinitely in your cupboard. If it has hardened because temperature has fallen below 70 degrees F, simply scoop what you need and heat.
